Abstract

Ikan lele merupakan ikan air tawar yang produksinya mengalami peningkatan setiap tahun di Indonesia. Peningkatan nilai tambah ikan lele salah satunya melalui pembuatan konsentrat protein ikan (KPI) dan tepung tulang sebagai salah satu alternatif sumber protein dan kalsium. Tujuan dari penelitian ini adalah untuk menentukan metode terbaik pembuatan KPI tipe A berdasarkan standar FAO dan tepung tulang ikan lele dengan kriteria kadar kalsium >119 mg/g. KPI dibuat menggunakan metode Swedia dengan 2 perlakuan jenis pelarut (isopropil alkohol dan etanol) dan ekstraksi (1, 2, dan 3 kali). Tepung tulang ikan dibuat menggunakan 2 perlakuan, yaitu metode pressure cooker dan ekstraksi asam basa. Parameter yang dianalisis meliputi proksimat, kadar kalsium, profil asam amino, derajat putih, daya serap air, dan daya serap minyak. Hasil penelitian menunjukkan bahwa metode terbaik pembuatan KPI pada perlakuan ekstraksi menggunakan isopropil alkohol dan ekstraksi sebanyak 3 kali. KPI tipe A yang dihasilkan telah memenuhi standar FAO untuk kadar air 5,34±0,27%, protein 83,10±0,92%, dan lemak 0,20±0,04%. Derajat putih KPI perlakuan terbaik 85,10±0,08%, daya serap air 6,48±0,04 g/mL, dan daya serap minyak 6,05±0,09 g/mL. Asam amino tertinggi leusina dan asam glutamat. Metode terbaik pembuatan tepung tulang ikan lele, yaitu ekstraksi asam basa dengan kadar kalsium 323,81±0,33 mg/g, derajat putih 94,65±1,96%, daya serap air 8,36±0,14 g/mL, daya serap minyak 6,47±0,31 g/mL, kadar air 4,17±0,35%, abu 85,88±0,72%, protein 1,48±0,18%, dan lemak 1,27±0,38%. KPI dan tepung tulang ikan lele berpotensi sebagai sumber protein dan kalsium.

Abstract

Bagiak is a biscuit made of sago flour, tapioca, arrowroot starch, sugar, and other ingredients. Bagiak is high in carbohydrates, but low in proteins. The aim of this study was to determine the best formulation resulting from the substitution of catfish protein concentrate and addition of catfish bone meal in making bagiak biscuits. The study used an experimental method with a completely randomized factorial design (RALF) with two treatments, namely substitution of catfish protein concentrates (FPC) for main meal (0%, 10%, 20%, and 30%) and addition of catfish bone meal (0, 1, 2, 3 %). For the selected formulas, the hedonic test results were analyzed, including protein and calcium levels, and test parameters according to SNI Biscuits 2973:2022. The selected formula was a 10% KPI formulation and 3% fishbone meal. The selected bagiak formulation produced a protein content of 10.90±0.01% and calcium of 572.32 mg/100 g. The protein and calcium levels of the selected bagiak were greater than those of the control and commercial bagiak. Test results for selected water content parameters, total aerobic plate number, Enterobacteriaceae, Salmonella spp., Staphylococcus aureus, heavy metal contamination: Lead (Pb), Cadmium (Cd), Tin (Sn), Mercury (Hg), and (As) met the SNI Biscuit quality requirements, SNI 2973:2022. The 10% FPC formulation and 3% fish bone meal have the potential to be nutritious snacks with better protein and calcium contents than commercial products.

Abstract

Ulva lactuca seaweed can be used to produce Nori-like goods using salty boiling fish effluent. The objective of this study was to assess the chemical, sensory, and color features of a specific nori-like formula derived from U. lactuca with the inclusion of cooked fish water concentrate. The manufacturing of nori-like goods involves the addition of varying quantities of boiled water concentrate at different stages of the process, specifically at 0%, 1%, 2%, 3%, and 4% concentrations. This research involved the analysis of sensory test results, proximate and dietary fiber content, amino acids, water activity, and color. The nori-like mixture was prepared by adding 3% concentrated heated water. The nori-like items produced in this study exhibited diminished nutritional value compared to commercially available nori. Significantly, the findings indicate that incorporating an extra 3% boiled water concentrate during the manufacturing of nori-like can enhance its nutritious content in comparison to the control nori-like (which does not contain boiled water concentrate). The formula selected yielded the following results: 12.77% water content, 14.53% ash, 17.02% protein, 5.88% fat, and 25.77% dietary fiber. The primary amino acids present in the selected nori-like samples were histidine, glutamic acid, and glycine. The aw value of the product was 0.59, while the L, a, and b values were 14.28, 0.76, and 14.44, respectively.

Abstract

Hand sanitizer among the community has a high alcohol content of up to 80% considered not halal products. Whereas according to Muslims related to halal products, alcohol is included in nonhalal products as an alternative to existing alcohol hand sanitizer preparations. So it needs to be made hand sanitizer based on halal and certainly has antibacterial activities. Vinegar is one of the active ingredients that have bacterial activity and has the potential to be made in gel hand sanitizer formulations. The aim of this research is to make a hand sanitizer formulation that meets SNI standards. The hand sanitizer will be made using a vinegar base made from apples with a formula of 5; 7.5 and 10%. This active ingredient formula is made into the gel with the use of other ingredients such as carbopol, TEA, methylparaben, glycerin, and aqua dest. The gel hand sanitizer formula is then conducted physical properties test to obtain SNI standards such as organoleptic test with five senses, pH with stick pH, viscosity, in addition to being tested anti-irritant with skin surface smear method. As for data analysis used one-way anova method with SPSS software. The results showed that the gel hand sanitizer formula of vinegar organoleptic and homogeneity has met the standards in addition to the viscosity of adhesion to irritant test. However, the pH and spread values have not met the standards.

Abstract

This research aims to determine the growth and yield response of Edamame (Glycine max L. Merrill) cv. Ryoko to plant spacing and chicken manure dosage. This research was conducted in Margahurip Village, Banjaran District, Bandung Regency, West Java Province with an altitude of 800 m above sea level, pH 6.06 (slightly acidic) and rainfall of 2,481 mm/year. This research used a factorial Randomized Block Design (RBD) method with 3 replications. First factor: Planting Distance (j1= 30 cm x 10 cm, j2= 30 cm x 20 cm, j3= 30 cm x 30 cm). Second factor: Chicken Manure Fertilizer Dosage (k1 = 0 tons/ha, k2 = 10 tons/ha, k3 = 20 tons/ha). The results of the research showed that there was an independent effect in the 30 cm x 30 cm planting spacing treatment which had a better influence on plant height, number of branches, number of planted pods and weight of planted pods. Meanwhile, the chicken manure dose of 10 tonnes/ha had a better effect on the number of pods planted and the weight of the pods planted.

Abstract

Alginic acid is an intermediate product in the alginate extraction process. In this study, alginic acid was generated from three separate sections of the thallus. The study aimed to define the influence of alkali solvents for pretreatment and the thallus parts from S. polycystum to produce alginate. Thus, this study identifies the proper utilization of seaweed as a source of alginate. The extraction procedure to obtain alginic acid was performed using Na2CO3 at a 2% concentration. The pretreatment improved the quality before extraction by soaking in KOH as a solvent. The statistical analysis was used to define significant differences in the pretreatment and thallus parts of the S. polycystum using ANOVA and the Tukey test as the post hoc. Alkali pretreatment and thallus sections substantially influence alginic acid yield, viscosity, and gel strength. Yield, ash content, moisture, pH, viscosity, whiteness degree, and gel strength of the best alginic acid chosen (pretreatment with KOH 0.90% from the basal section) were around 21.51 %, 10.34 %, 7.04 %, 2.54, 53.37 cP, 57.91 %, and 58.80 g/cm2, respectively. Except for the ash content parameter, the qualities of the alginic acid generated satisfied the standard. In conclusion, it is a better understanding of the alginate production from different thallus parts, making utilization more effective.

Abstract

The production of trash fish from capture fisheries in South Bengkulu Regency is remarkably high but remains underutilised by the local community. Predominant trashfish species include peperek (Leiognathus bindus), senangin (Polynemus tetradactylum), and gulamah (Johnius trachycephalus). This study aims to evaluate the organoleptic, physical, and chemical characteristics of fish balls derived from trash fish through compositional experimentation. The research employed a randomised complete design (RCD) with seven product formulations and three replications. The study was conducted and tested at the Faculty of Agriculture Laboratory, Universitas Sriwijaya, from March to May 2024. The results revealed significant effects of multi-species fish ball compositions on moisture content, ash content, protein content, fat content, and whiteness degree. The gel strength testing showed a maximum gel strength of 138.73 g/cm². Furthermore, this research highlights that factors influencing the success of diversification strategies, including climate, freshness, trash fish species, production processes, ice addition, and raw material availability, could contribute to increased value and community welfare

Abstract

Sargassum polycystum is well known as macroalgae that contain active compounds with great function as antioxidants. The antioxidants content of the seaweed has links closely to phenolic compounds. The study is aimed to determine active compound quality from different thalli parts of S. polycystum extracted by Ultra-sound-assisted extraction (UAE). Fresh samples were prepared into three parts, which are apical, middle, and base thallus. Extraction was carried out by ultrasonication method and using 90% acetone as solvent. Levels of total phenols were analyzed using the Reagent Folin-Ciocalteu. Antioxidant activities were analyzed using DPPH, FRAP, and CUPRAC methods. The highest total phenolic content was found at the apical of the thallus, about 875.64 mg GAE/g. The most excellent DPPH antioxidant activities in S. polycystum were found from the apical part of the thallus with an IC 50 value of 38.49 ppm. The FRAP and CUPRAC antioxidant’s capacity showed the highest in the apical part of the thallus, which was 989.93 mol Fe (II)/g and 555.52 µmol Trolox/g, respectively. The extraction results of different parts of the thallus show highly potent active compounds of alkaloids, steroids, phenols, flavonoids, and potent antioxidants activity.Keywords: antioxidants, phytochemical, ultrasonication, S. polycystum

Abstract

Desa Petang terletak di Kecamatan Petang, Kabupaten Badung. Desa ini berada di ketinggian 800 meter dari atas permukaan laut. Desa Petang merupakan salah satu desa yang dijadikan tujuan wisata di Bali. Desa petang merupakan desa agronomi/pertanian dan pariwisata. Desa petang memiliki potensi pertanian yang luar biasa terutama manggis, yang apabila dikelola dengan baik, maka akan menjadi Agro Wisata bagi desa petang. Selain pertanian, petang juga memiliki kekayaan alam yang luar biasa yang berupa pemandangan pegunungan dan sungai yang biasa dipergunakan sebagai arung jeram, namun sayang kondisi arung jeram di desa Petang seaakan matri suri karena tidak meiliki tata kelola yang baik dan sarana untuk promosi. Petang juga memiliki sentra sentra pengrajin perak yang berada pada desa tersebut. Permasalahan utam dalam industry perak adalah masalah produksi (stok bahan baku), Manajemen keuangan dan masalah pemasaran. Pada kegiatan ini akan dilakukan pendampingan dan pelatihan. Selain pelatihan dan pendampingan, pada kegiatan ini akan direncanakan membuat sistem informasi untuk desa berbasis raspberry pi, melakukan pelatihan entrepreneurship  bagi aparat desa dan masyarakat desa petang untuk menumbuhkan sentra sentra industry kecil, Untuk mitra UKM yang terlibat selain dilakukan pelatihan akan dibangun sistem e-commerce agar meningkatkan pendapatan UKM.

Tanaman salam merupakan tanaman yang banyak digunakan di Indonesia dan padabeberapa penelitian telah terbukti memiliki aktivitas farmakologis salah satunya sebagaianti dislipidemia dimana ekstrak etanol daun salam (Syzygium polyanthum) dapatmenurunkan kadar kolesterol dan trigliserida. Sistem nanopartikel merupakan sistempenghantaran yang banyak dikembangkan dan dapat meningkatkan efektifitas terapi,menurunkan efek samping, dan aman. Sehingga, tujuan dari penelitian ini adalahmeningkatkan efektifitas anti dislipidemia dari ekstrak etanol daun salam yangdiformulasikan dalam bentuk nanopartikel. Pada penelitian ini dilakukan uji skriningfitokimia ekstrak etanol daun salam (Syzygium polyanthum) serta formulasi nanopartikelmenggunakan polimer kitosan dan sodium tripolyphosphate sebagai cross linker.Adapaun variabel yang digunakan rasio kitosan : STPP dimana dibuat tiga formula yaituF1, F2 dan F3. Karakterisasi nanopartikel yang dilakukan yaitu ukuran partikel, indekspolidispersitas, dan potensial zeta. Hasil penelitian ini ekstrak etanol daun salam yangdigunakan memiliki kandungan beberapa metabolit sekunder yaitu flavonoid, alkaloid,tanin, saponinm kuinon dan triterpenoid. Adapun hasil ukuran partikel pada F1, F2 danF3 berturut-turut adalah 384,37 ± 6,53 nm ; 180,1 ± 0,5 nm ; 512,67 ± 21,97 nm. Nilaiindeks polidispersitas adalah 0,566 ± 0,049 (F1) ; 0,220 ± 0,016 (F2) ; 0,636 ± 0,02.Selain itu nilai potensial zeta yang didapatkan pada F2 adalah 21,8 ± 1,74 (mV)menyatakan bahwa nanopartikel yang terbentuk memiliki stabilitas yang baik. Padapenelitian ini dapat disimpulkan bahwa berdasarkan hasil ukuran partikel, indekspolidispersitas, potensial zeta yang didapatkan, formula paling optimum adalah F2 danmengindikasikan formula nanopartikel yang terbentuk bersifat stabil serta berpotensiuntuk memberikan hasil yang baik sebagai anti dislipidemia dikarenakan ukuran partikelkurang dari 1000 nm.
