Abstract

This study aims to determine the effect of carrageenan and gum arabic formulations on chemical properties, level of elasticity, and sensory properties of pumpkin jelly candy and to obtain the right formulation of carrageenan and gum arabic to produce good quality jelly candy. The study was arranged in a Completely Randomized Block Design with a single factor and 4 replications. The treatment was the ratio of carrageenan and gum arabic consisted of 5%:0% (K1), 4%:1% (K2), 3%:2% (K3), 2%:3% (K4), 1%:4 % (K5). The data obtained were analyzed for homogeneity with the Barlett test, ANOVA, and the Tuckey test at the 5% level.  Determination of the best treatment for pumpkin jelly candy was determined by the De Garmo method.  The results showed that the best jelly candy was the K3 treatment (3% carrageenan; 2% gum arabic) which resulted in a texture score of 3.80 (chewy), color with a score of 3.97 (dark yellow), taste with a score of 4.11 (like ), water content of 7.66%, ash content of 0.99%, reducing sugar content of 14.31%, and sucrose content of 27.7%.  Formulation of carrageenan and gum arabic significantly affected the chemical properties, level of elasticity, and sensory properties of pumpkin jelly candy. Keywords: Gum Arabic, Carrageenan, Jelly candy, Pumpkin.

Abstract

The increase in public coffee consumption is influenced by lifestyle, technological support and the emergence of various choices of coffee. Herbal coffee is generally made by adding herbal powder, infusion, and drying. Soaking techniques with peppermint oil to make herbal coffee have never been studied. The purpose of this study was to determine the effect of robusta coffee treated with soaking time and peppermint oil concentration on chemical characteristics, sensory and antimicrobial activity. Randomized Complete Group Design method with two factors was performed in this study. The first factor is soaking time (L) which consists of 0 (L0), 5 (L1), and 10 (L2) min. The second factor was peppermint oil concentration consisting of 0% (K0); 0.5% (K1); and 0.75% (K2). The results showed that the soaking time and concentration of peppermint oil can increase the water content and pH. The peppermint coffee showed antimicrobial activity against Salmonella typhi and Eschericia coli bacteria with an inhibition diameter of 8.72-13.16 mm and 9.88-12.24 mm, respectively. The peppermint coffee of L1K1 treatment (5 min soaking time; 0.5% peppermint concentration), is preferred by panelists with sensory test scores on taste (6.15), aroma (7.09), aftertaste (5.32), and overall (6.16). Keywords: Coffee bean, Concentration, Peppermint oil, Robusta coffee, Soaking time.

Abstract

Spices have always been a part of Indonesia's culinary culture. One of the spices that has high economic value and efficacy is galangal. Therefore, testing of bioactive compounds and the effect of making shredded spice fish with the addition of various concentrations of galangal needs to be further investigated in terms of sensory quality and financial feasibility. This study aims to determine the bioactive components in galangal spice, determine the best concentration of galangal addition in shredded spiced fish products, and determine the financial feasibility. The research was conducted by making galangal spice and shredded spiced fish at IDAEZ Group MSMEs. Subsequently, the galangal spice was tested for bioactive compound (GC-MS) and then, sensory tests were carried out on shredded fish spices mixed with galangal spices (1%, 2%, 3%). After that, the financial feasibility analysis was calculated. The results obtained showed that there were four main components in galangal spice, such as 5-Eicosenen, (E)-, n-Hexadecanoic acid, oleic acid, and 9-Octadecenoic acid (Z)-, oxiranylmethyl ester. Meanwhile, the best concentration of shredded spice fish was found in treatment P3 (addition of 3% galangal). Lastly, the shredded spice fish was found to be viable with an income of IDR 427,547 per production. Keywords: Financial feasibility, GC-MS, Galangal, Sensory.

Abstract

Red palm oil (RPO) is known for its high carotenoid content, particularly β carotene and α-carotene, which provide significant provitamin A activity. However, it is susceptible to oxidation during frying and results in nutrient loss and quality degradation. This study investigates the effects of high temperatures and prolonged heating durations on the chemical and sensory properties of RPO. The experiment involved heating RPO at three different temperatures (140°C, 180°C, and 220°C) for durations ranging from 2 to 10 hours. Chemical analysis included peroxide values, free fatty acids, and changes in functional groups through Fourier Transform Infrared (FTIR) spectroscopy. Sensory evaluations focused on aroma and color alterations due to heating. Results showed that prolonged heating of RPO at high temperatures led to significant increase in peroxide values, and the formation of oxidation products, including aldehydes and ketones, which negatively impacted the sensory qualities. The oil darkened, and a burnt aroma developed, reducing overall sensory appeal. These findings provide new insights into the optimal frying conditions to preserve the nutritional and sensory qualities of RPO, particularly by minimizing heating duration and temperature. Keywords: Nutritional value, Prolonged heating, Red palm oil, Sensory attributes, Thermal oxidation.

Abstract

The waste generated from corn cultivation remains underutilized, necessitating studies on its potential for economic value. The objective of this research was to study the cicular economi model to maximally utilize corn wastes. Corn plant samples were collected from 20 different locations. The corn plants were separated into husks, cobs, grains, leaves, and stems, then weighed to obtain physical data in the form of the percentage weight of each part. The parts of the corn plants were chemically analyzed to determine their cellulose, hemicellulose, lignin, extractable substances, ash content, and C/N ratio. In addition, interviews were conducted to assess the potential for developing derivative products and market prospects. Exponential Comparison Method (ECM) was used to determine which derivative products to be developed within the circular economy model design. The study revealed the dry weight composition of corn plant as follows: husks 6.34%, cobs 7.19%, grains 31.65%, leaves 17.24%, and stems 37.58%. The chemical composition of corn plant was hemicellulose 27.55%, cellulose 29.26%, lignin 11.51%, extractive substances 30.19%, and ash content 1.49%. The C/N ratio values of the corn plant by-products were: husks 49.79, cobs 95.11, leaves 30.99, and stems 56.21. Based on the ECM calculations, silage was selected as the top priority to be developed, with a score of 121,972,607.

Abstract

This study aims to determine the effect of good corporate governance (GCG), company reputation, and company competence on the quality of financial reports with audit quality as a moderating variable. The population in this study are manufacturing companies in the various industrial sectors listed on the Indonesia Stock Exchange in 2015 - 2019 with a total of 185 companies. The method used was purposive sampling, 37 companies were selected as the research sample. The results of the study show that Good Corporate Governance (GCG) has no direct effect on the quality of the company's financial statements. Meanwhile, company reputation and company competence have a significant and positive effect on the quality of financial reports. After being moderated by audit quality, Good Corporate Governance (GCG), company reputation, and company competence have a positive and significant effect on the quality of financial reports.

Abstract

Wilayah pesisir kota Bandar Lampung mempunyai potensi sumber daya alam yang beragam. Wilayah ini kini mengalami kemerosotan fungsi ekologis karena pencemaran limbah rumah tangga terutama sampah yang berbahan plastik. Hal ini karena beban cemaran terus meningkat akibat sampah plastik yang memerlukan waktu ratusan tahun untuk dapat teruraikan secara alami oleh mikroba, sementara sumber pencermarannya juga terus bertambah. Penelitian ini ditujukan untuk menentukan pengaruh konten eco-brick dalam siaran TVRI dan variabel demografi terhadap sikap peduli lingkungan masyarakat pesisir. Kemasan film ini didedahkan (exposed) menggunakan video player kepada 10 kelompok dengan anggota 10 orang per kelompok. Metode penelitian ini adalah wawancara tentang demografi partisipan yang dipetakan berdasarkan: umur, kelamin, pendidikan, etnis-budaya, pekerjaan, dan juga rasa ketertarikan pada bisnis eco-brick. Variabel daya tarik terhadap informasi bisnis eco-brick dan variabel demografis ini diperlakukan sebagai variabel prediktor dalam model Ordinally Regression. Sikap kepedulian terhadap penyelamatan lingkungan digunakan sebagai variabel respon dalam skala ordinal bernilai 0, 1, dan 2. Masing-masing skala ini merepresentasikan respon rendah, sedang dan tinggi. Optimasi parameter model dan uji hipotesis dilakukan pada taraf nyata 95% menggunakan software Minitab 17. Berdasakan hasil regresi ordinal yang menggunakan piranti lunak Minitab V.16 pada selang kepercayaan 10% menunjukan bahwa ecobrick innovation berpengaruh nyata dengan P value 0,010 dan ods ratio 11,76. Variabel dummy yang berpengaruh nyata pada sikap peduli lingkungan adalah nelayan, pedagang, trust, dan pendatang. Simpulan yang dapat dibuat bahwa (a) sikap kepedulian partisipan adalah 11,76 kali lebih tinggi bagi yang tertarik pada bisnis eco-brick dibandingkan dengan yang tidak, (b) masyarakat pendatang merupakan 3.77 kali lebih tinggi dari pada yang asli setempat (c) masyarakat nelayan maupun pedagang lebih rendah yang masing-masing hanya 0.18 dan 0.04 dari pada yang pekerjaannya serabutan. Implikasi kebijakan yang disarankan dari penelitian ini adalah bahwa inovasi eco-brick dapat dijadikan insentif untuk menyerap para pekerja serabutan agar lebih lebih produktif sekaligus sebagai strategi penyelamatan lingkungan pesisir.

Abstract

Kantong semar spesies Nepenthes mirabilis merupakan salah satu tanaman prioritas dilindungi yang sudah masuk dalam kategori Appendix-2. Salah satu upaya menjaga populasi Nepenthes mirabilis adalah dengan melakukan kultur jaringan, teknik aklimatisasi yang tepat pada kultur jaringan dapat mengoptimalkan pertumbuhan Nepenthes mirabilis. Adapun tujuan dari penelitian ini adalah untuk menganalisis respon pertumbuhan planlet kantong semar di berbagai macam media tanam, intensitas naungan dan interaksi antara media tanam dan intensitas naungan saat aklimatisasi. Rancangan percobaan yang digunakan dalam penelitian ini adalah Rancangan Acak Kelompok (RAK) pola petak terpisah (split plot design) dengan dua faktor perlakuan dan tiga ulangan. Perlakuan pertama intensitas naungan (50%, 65%, dan 80%) dan perlakuan kedua media tanam yang terdiri atas P1 = 100% cocopeat (1:0), P2 = 100% arang sekam (0:1), P3 = 50% cocopeat dan 50% arang sekam (1:1), P4 = 25% cocopeat dan 75% arang sekam (1:3), P5 = 75% cocopeat dan 25% arang sekam (3:1). Data yang diperoleh dianalisis sidik ragam menggunakan SPSS dan dilanjutkan dengan uji lanjut beda nyata terkecil (BNT) untuk faktor perlakuan intensitas naungan dan uji lanjut berganda duncan untuk faktor perlakuan berbagai formulasi media tanam serta interaksi antara berbagai formulasi media tanam dengan intensitas naungan. Hasil analisis menunjukkan intensitas naungan berpengaruh sangat nyata pada persentase hidup tanaman (100,00), kemasaman media tanam (6,96), jumlah kantong (3,77) dan jumlah akar (11,80). Intensitas naungan juga berpengaruh nyata terhadap panjang akar terpanjang (5,46) serta tidak berpengaruh nyata pada parameter tinggi tanaman dan diameter batang. Macam media tanam berpengaruh nyata terhadap persentase hidup tanaman (100%), kemasaman media tanam (6,88), tinggi tanaman (0,42), jumlah kantong (3,93), jumlah akar (12,17), panjang akar terpanjang (5,52) dan diameter batang (1,60). Pada interaksi antara perlakuan intensitas naungan dan formulasi media tanam menunjukkan bahwa interaksi berpengaruh sangat nyata pada persentase hidup tanaman (100,00), kemasaman media tanam (7,04), jumlah kantong (4,21), jumlah akar (14,33) dan diameter batang  (2,35). Interaksi antara perlakuan intensitas naungan dan formulasi media tanam juga berpengaruh nyata pada panjang akar terpanjang (7,12) serta tidak berpengaruh nyata pada parameter tinggi tanaman.

Abstract

Demensia merupakan salah satu perubahan struktur dan fungsi fisik pada lansia. Demensia bukan merupakan penyakit namun qodrat alam yang dapat dialami manusia terutama orang yang sudah lanjut usia. Demensia pada lansia memiliki banyak faktor resiko, seperti umur, tingkat pendidikan, tekanan darah, asupan nutrisi, genetik, jenis kelamin dan kurangnya aktivitas fisik. Meskipun menua adalah suatu keadaan yang tidak bisa dihindari atau ditolak, namun demensia dapat dikelola sehingga dapat menurunkan kemungkinan demensia. Usia menjadi faktor resiko yang paling penting dalam perjalanan demensia. Suatu penelitian epidemiologi menunjukkan bahwa satu dari 12 orang yang berusia lebih dari 65 tahun dan satu dari 3 orang yang berusia diatas 90 tahun akan mengalami demensia. Selain usia, berbagai faktor lain juga mempengaruhi angka kejadia serta prevalensi demensia. Studi tentang pengaruh aktifitas secara spesifik dalam mempengaruhi demensia belum banyak dilakukan. Tujuan penelitian adalah untuk menganalisis pengaruh kebiasaan aktifitas fisik terhadap kejadian demensia pada lanjut usia di Kota Pekalongan. Penelitian menggunakan metode deskriptif analitik dengan pendekatan Cross Sectional. Populasi penelitian yaitu seluruh lansia yang terdaftar di wilayah  Puskesmas Tirto Kota Pekalongan sejumlah 165 orang. Sampel penelitian dihitung berdasarkan rumus Rao sejumlah 65 responden dan sistem pemilihan sampel dengan Simple Random Sampling. Analisa data dilakukan dengan uji Chi Square. Hasil penelitian menunjukkan kebiasaan aktifitas fisik berpengaruh terhadap kejadian demensia pada lansia (OR sebesar 0,684). Aktivitas dan latihan fisik yang teratur dapat mengurangi risiko terjadinya penyakit demensia karena dapat meningkatkan fungsi kognitif pada lanjut usia. Seseorang yang melakukan aktifitas fisik juga cenderung memiliki memori yang lebih tinggi daripada yang jarang beraktifitas.Disarankan kepada lansia untuk membiasakan melakukan aktifitas fisik secara rutin untuk menurunkan resiko terjadinya demensia.

Abstract

This study aims to understand the phenomenon of resilience in parents diagnosed with Mental Health Disorders (GKM) in the context of adaptive childcare. Using a qualitative phenomenological approach, this study explored the subjective experiences of two participants (married couples) who both lived with GKM and had children. The results of in-depth interviews showed that although the diagnosis of GKM brought significant emotional and relational challenges, participants demonstrated strong resilience. This resilience is manifested through the discovery of meaning in the role of parents as a reminder to keep struggling, as well as the utilization of adaptive parenting strategies such as flexible task sharing and external support from spouses, family psychologists, and the community. The findings indicate that GKM does not necessarily hinder adaptive parenting capacity, but rather encourages unique resilience mechanisms. This research contributes to the literature by presenting a strengths-based perspective, highlighting the adaptive capacity of parents with GKM, and providing practical implications for developing more targeted psychosocial support interventions.
