Abstract

Abstract

Some of the tapioca processing industries have been classified as advanced industries and some are still traditional. Traditional food industries are generally small scale. These various characteristics of the industry are caused by relatively small capital, relatively high maintenance costs, generally simple technology, generally low product quality, and limited access to markets. The processing technology used can be grouped into three, namely: first; the traditional tapioca processing industry which still relies on sunlight and its production is highly dependent on the seasons, second; semi-modern namely tapioca processing industry that uses a drying machine (oven) in the drying process and the third; Modern technology is the tapioca processing industry that uses machines from the initial process to the finished product. The modern tapioca industry uses fully automated equipment that has high efficiency, because the production process requires less labor, shorter time and produces quality tapioca. One of the advantages of traditional tapioca is that it expands well during oven development (Camargo et al., 1988) and frying. This type of starch is very much needed by the food industry, such as the atomic bean or cracker industry which can provide great benefits because with a small amount of starch it can produce large volumes of food products. In this study, 15 samples of starch were used consisting of 5 types of samples from modern industry, 5 types of samples from semi-modern industries and 5 types of samples from traditional industries. The analysis carried out included analysis of water content, ash content, protein content, starch content, amylose content, swelling power and solubility, specific volume of starch development (baking expansion and frying expansion), starch microscopy, amylographic properties, clarity of starch gel, acidity and white degree. The physicochemical characteristics of cassava starch vary between modern, semi-modern and traditional industries, which are influenced by the processing process. The results showed that traditional processing showed the best results with the development value of the baking expansion process of 9.25-11.97 ml/g, frying expansion of 8.38-11.09 ml/g, amylose of 21.49 -30.89%, swelling power of 10.07-15.79 g/g, solubility of 23.65-34.63% and viscosity of paste 1139.2-2782.4Cp.

Abstract

Intake refers to the food and beverages consumed by an individual within a certain period. It encompasses all nutrients absorbed by the body from food and beverages sources. Adequate and balanced intake is necessary to maintain the health and well-being of the body, including sufficient energy, carbohydrates, protein, fat, vitamins, and minerals. Intake analysis helps evaluate the eating patterns of individuals or populations to support optimal nutritional needs fulfillment. This study aims to analyze the energy, carbohydrate, and fiber intake from staple foods in the non-agricultural area of Baubau City in 2022. The research involved 127 respondents residing in coastal or non-agricultural areas of Baubau City. The data collection method used was the Semi-Quantitative Food Frequency Questionnaire (FFQSQ) through direct interviews. The research findings indicate that the energy, carbohydrate, and fiber intake from staple foods in the non-agricultural area of Baubau City ranged from 20-40%, with carbohydrate intake also ranging from 20-40%, while fiber intake ranged from 0-20%. The most frequent average consumption was 3293.38 kcal/day of rice, 31.77 kcal/day of corn, 67.83 kcal/day of sweet potatoes, and 65.70 kcal/day of cassava. The conclusion of this study is that the energy, carbohydrate, and fiber intake from staple foods in the non-agricultural area of Baubau City are still insufficient. The research recommendation is for the community to pay more attention to daily nutritional intake, especially in terms of energy, carbohydrates, and fiber. The government should enhance nutritional education for the community, especially in non-agricultural areas, about the importance of consuming diverse, balanced, and appropriately portioned foods

Abstract

Rapid development of digital technology has changed the educational practices, including the way students learn languages. This research aims to explore perceptions, experiences and challenges faced by the students in using handwriting as a part of multisensory learning strategy in online English class. This research employs convergent mix method whereas the data were gathered from 21 university students majoring in Information system through Likert scale questionnaire and open ended questions. The result of statistics and thematic analysis shows that most of respondents felt the cognitive benefits from handwriting, including improved memory, focus, grammar comprehension and learning engagement. Regression analysis showed that feeling comfort in handwriting has significant positive impact on memory ability; while challenges, including feeling tired and time required do not significantly reduce its cognitive benefits. This research supports multisensory learning theory (VAKT) and strengthen previous findings which showed that handwriting activates wider brain networks compared with typing. Last but not least, handwriting remains relevant in digital era and recommended to be integrated equally in online learning as a part of effective and holistic learning strategy.

Abstract

From the several sources of budget that the bank has collected, it is appropriate for the bank to prepare a budget placement program based on the distribution program by taking into account the policies that have been determined. The total budget collected by the bank consists of two types, namely the budget that cannot be loaned and the budget that can be lent. The existence of a budget that cannot be loaned will increase the cost of the budget that will be purchased by residents called the cost of funds, in the end it will force banks to be able to manage a budget that has been activated into a very useful source of income and can co-exist with other banks. To simplify the analysis, all the variables to be analyzed are combined and then calculated in the SPSS application, so that the results obtained are that the distributed credit variables are the most significantly correlated with interest income. The definition is that the higher the budget that is distributed to distributed credit, so that interest income tends to increase.
