Abstract

Jackfruit rags are a jackfruit waste that has the potential properties of a gelling agent in making jackfruit jelly candy. The purpose of this study was to see how the substitution of kappa carrageenan for jackfruit rags, as well as the sugar concentration, affected the sensory properties of jackfruit jelly candy and to figure out which treatment was best, as well as to see how the chemical properties of jackfruit jelly candy with and without jackfruit rags differed. A randomized block design with 2 factors of treatments was applied in this study, i.e.: the proportion of jackfruit rags and kappa-carrageenan (70:30; 60:40; and 50:50%) and the concentration of sucrose (30, 40 and 50%). The substitution of jackfruit rags affected the texture of the jelly candy, making it softer and less clear in appearance, but gave the best flavour and preference score. The sensory qualities of jelly sweets were also affected by sugar concentration. Increasing the concentration of added sugar affected the sweetness of the jelly candy, which became sweeter. The color of the jelly candy changed to brown, which changed the flavour of the jelly candy and made it appealing to the panellists. The best treatment from the analysis was the use of 30% jackfruit rags substitution with 50% sugar with chemical characteristics of 16.47% moisture, 0.458% ash, 7.91% reducing sugar, and acidity degree of 4.49. Compared to jelly candy treated without substituting jackfruit rags (control), the best product (K1G3) contained lower ash and reducing sugar but had higher water content and acidity degree. Keywords: Carrageenan; jackfruit rags; jelly candy; sucrose. ABSTRAK Dami nangka merupakan salah satu limbah dari buah nangka yang masih jarang untuk dimanfaatkan. Padahal dami nangka memiliki kandungan serat dan pektin yang cukup tinggi, sehingga perlu dimanfaatkan. Salah satu bentuk pemanfaatannya yaitu sebagai substitusi untuk gelling agent pada permen jelly nangka. Penelitian bertujuan untuk mengetahui pengaruh substitusi dami nangka dan konsentrasi sukrosa terhadap sifat sensori permen jelly serta menentuan perlakuan terbaik dan mengkaji perbedaan sifat kimianya dengan permen jelly tanpa substitusi dami nangka. Penelitian ini merupakan penelitian eksperimental rancangan acak kelompok faktorial dengan dua faktor yaitu perbandingan kappa karagenan dan tepung dami nangka terdiri 3 taraf yaitu (70: 30; 60:40; dan 50:50%) dan variasi konsentrasi sukrosa terdiri dari 3 taraf (30, 40 dan 50%). Hasil penelitian menunjukan substitusi dami nangka dan perbedaan konsentrasi sukrosa dalam permen jelly berpengaruh secara nyata terhadap sifat sensori permen jelly yaitu tekstur, kenampakan, flavor, kesukaan, warna dan rasa manis. Perlakuan terbaik yaitu penggunaan substitusi dami nangka sebesar 70:30 dengan sukrosa 50% yang memiliki karakteristik sensori tekstur agak kenyal (2,98), kenampakan agak jernih (3,31), warna kuning (4,66), rasa manis yaitu manis (4,08), flavor enak (3,73), dan kesukaan yaitu suka (3,58). Karakteristik kimia pada perlakuan terbaik yaitu kadar air sebesar 16,47%, kadar abu 0,458%, kadar gula reduksi 7,91% dan derajat keasaman (pH) sebesar 4,49 (asam). Apabila dibandingkan dengan permen jelly tanpa subtitusi dami nangka (kontrol), produk terbaik (K1G3) memiliki kadar abu dan kadar gula reduksi yang lebih rendah namun memiliki kadar air dan derajat keasaman yang lebih tinggi. Abstract

Indonesians still do relatively little to prepare and consume veggies. Products made from vegetable raw materials that have the potential to be developed is a jam. Making vegetable jam with a combination of several types of vegetables can make the flavor of the jam less favorable. So, efforts are required to add mandarin orange peel extract, which includes essential oils and possibly intense limonene components as a taste, to make up for the deficits arising from the flavor aspect and enhance the intrinsic quality of the jam. This study sought to identify the best treatment and compare it to a control, as well as the effect of adding orange peel extract and the difference in concentration added to the sensory properties of vegetable jam. It also sought to identify the best treatment and examine vegetable jam's physicochemical and microbiological properties. This study employed a factorial, totally randomized design as its methodology. Mandarin orange peel extract treatment without encapsulation (E1) and encapsulated orange peel extract made up the first factor (E2). The concentration that was added to the vegetable jam, consisting of 0.5% (K1), 1% (K2), 1.5% (K3), 2% (K4), and 2.5%, is the second factor (K5). According to the analysis of variance, adding orange peel extract in varying concentrations greatly affected the aroma, taste, and overall preference. Still, it had no discernible impact on the color characteristics or lubricating power. The E2K4 treatment produced the greatest results for the sensory properties of the jam when compared to controls using a paired T-test. This significantly changed overall preference, water content, water activity, antioxidant activity, pH, and TPC. Yet, it had little impact on color saturation.

Abstract

Gembolo (Dioscorea bulbifera L.) merupakan tanaman yang banyak ditanam di Indonesia sebagai tanaman liar dan berpotensi menjadi sumber prebiotik. Gembolo mengandung prebiotik berupa inulin 10,96%, karbohidrat 19,8% dan glukomanan sebagai polisakarida utamanya. Tepung gembolo digunakan sebagai prebiotik pada yoghurt dan untuk meningkatkan umur simpan umbi gembolo. Penambahan tepung gembolo pada produk yoghurt diharapkan dapat meningkatkan nilai kegunaan yoghurt sebagai minuman probiotik karena menyediakan serat pangan dan diharapkan dapat menjaga kelangsungan hidup bakteri asam laktat. Penelitian ini bertujuan untuk mengetahui cara memformulasi dan menguji sifat fisikokimia, mikroba dan sensorik yoghurt sinbiotik dengan penambahan tepung gembolo dan waktu fermentasi yang tepat. Penelitian ini menggunakan metode eksperimen dengan rancangan acak lengkap faktorial. Parameter yang dianalisis adalah sineresis, pH, total asam, total bakteri asam laktat, dan organoleptik. Sineresis dan nilai total asam terbaik terdapat pada sampel 2% dengan masa inkubasi 24 jam, pH terendah dan total bakteri asam laktat tertinggi terdapat pada sampel 3% dengan masa inkubasi 24 jam. Kata kunci: Probiotik; prebiotik; simbiosis yoghurt; gembolo.

Abstract

Inpago-Protani rice is a new rice variety from Jenderal Soedirman University, Indonesia. Producing rice flour as an intermediate product is a practical rice processing method. However, the utilization of rice flour as a wheat flour alternative is limited due to the differences in their gelatinization qualities. Fermentation with Lactobacillus sp. changes the gelatinization properties of rice flour by increasing the number of microorganisms and stimulating their metabolism in food materials. This study sought to determine how the physical and chemical qualities of Inpago-Protani rice flour are affected by the duration of fermentation, the concentration of Bimo-CF starter, and other factors. Applying 0.6% Bimo-CF starter for 12 hours at 30°C was the most effective method for fermenting Inpago-Protani rice flour. The resulting rice flour had a yield of 40.3%, a protein content of 10.3% (db), a carbohydrate content of 77.1%, a fat content of 0.4%, an ash content of 0.5%, a moisture content of 12.2%, and 338.7 kcal of energy. The enhanced characteristics of fermented rice flour may increase its versatility for subsequent processing.

Abstract

The research aims to determine the effect of adding mungbean and skim milk on the physical, chemical and sensory properties of corn milk as well as the best formula to produce the best corn milk. The experimental design used was a factorial randomized block design. The factors studied were the addition of green beans consisting of three levels, namely 10, 20 and 30% and the concentration of skim milk consisting of three levels, namely 3, 9 and 15%. Three repetitions were carried out to obtain 27 experimental units. The results showed that the higher the addition of green beans, the lower the viscosity and protein content. The higher the concentration of skim milk used, the higher the total dissolved solids, the lower the water content, and the higher the fat content. Determining the best treatment using the Multiple Attribute Method. Sweet corn milk with the addition of 10% green beans and 3% skim milk was the best treatment with total dissolved solids of 11.67oBrix; viscosity 27.9 cP; moisture 86.1%; ash content 0.357%; fat content 0.643%; protein content 1.69; whitish yellow color (3.35); slightly strong corn aroma (3.28); slightly thick (3.23); delicious flavor (3.67); and favorable (3.63).

Abstract

Penulisan penelitian ini bertujuan untuk mengkaji sejarah awal adanya kesenian kuda kepang serta upaya pelestariannya yang dilakukan masyarakat Jawa di Sumatera utara khususnya di Kabupaten Langkat, dan juga membahas tentang kontribusi kuda kepang soponyono di Kecamatan Sei Lepan Kabupaten Langkat sebagai sarana pembauran sosial. Metode penelitian yang penulis gunakan dalam penulisan penelitian ini yaitu jenis penelitian kualitatif deskriptif dengan pendekatan antropologi yang lebih mengarah kan penjelasannya sesuai dengan kebudayaan di lapangan melalui metode etnografi. Berdasarkan hasil penelitian ini dapat disimpulkan bahwa pada awalnya kesenian kuda kepang dibawakan ke indonesia melalui masyarakat Jawa yang datang ke indonesia baik melalui jalur buruh perkebunan milik kolonial juga melalui transmigrasi penduduk. Masyarakat Jawa yang ada di Sumatera melestarikan keseniannya di tempat rantauannya hal ini dilakukan sebagai upaya kerinduan terhadap kampung halaman namun seiring berkembangnya zaman kesenian Jawa kurang diminati namun kuda kepang merupakan salah satu kesenian Jawa yang masih populer dan sering dipertunjukkan. Salah satu nya adalah kesenian kuda kepang soponyono grup yang ada di kecamatan Sei Lepan selain menjadi sarana hiburan bahkan kesenian ini juga menjadi sarana pembauran masyarakat di Kecamatan Sei Lepan, ini merupakan salah satu bukti keberhasilan orang Jawa yang mampu berbaur di masyarakat multietnis dan juga meperkenalkan keseniannya sehingga dapat diterima dan diminati masyarakat yang berbeda etnis. Abstract

Usaha Mikro, Kecil, dan Menengah (UMKM) memiliki peran signifikan dalam perekonomian Indonesia, namun masih menghadapi berbagai tantangan, terutama dalam hal pemasaran di era digital. Penerapan strategi pemasaran digital yang efektif sangat penting untuk membantu UMKM memperluas jangkauan pasar dan meningkatkan daya saing mereka. Kegiatan pengabdian ini bertujuan untuk meningkatkan keterampilan pemasaran digital bagi UMKM anggota Aspikmas di Kecamatan Baturraden, Kabupaten Banyumas, melalui pelatihan dan pendampingan intensif. Kegiatan dimulai dengan wawancara dan focus group discussion (FGD) untuk mengidentifikasi kebutuhan dan masalah yang dihadapi peserta. Pelatihan diikuti oleh 20 usaha mikro, yang dilaksanakan dengan metode ceramah dan praktik langsung. Peserta diajarkan teknik pengambilan foto produk, editing menggunakan aplikasi Canva, dan pengunggahan konten pemasaran ke media sosial. Evaluasi dilakukan melalui penugasan mengunggah konten yang dihasilkan ke platform digital seperti WhatsApp, Instagram, dan Facebook. Hasil kegiatan menunjukkan peningkatan keterampilan peserta dalam hal pengambilan gambar produk yang lebih menarik dan penyusunan konten pemasaran digital. Peserta juga mulai memahami pentingnya mencantumkan informasi yang relevan, seperti logo halal dan deskripsi produk, untuk meningkatkan kepercayaan konsumen. Meskipun beberapa tantangan masih dihadapi, seperti rendahnya pemahaman mengenai penggunaan e-commerce dan iklan berbayar, pendampingan ini berhasil meningkatkan kemampuan dasar pemasaran digital peserta. Kegiatan ini diharapkan dapat memberikan dampak jangka panjang terhadap pertumbuhan usaha mikro di Baturraden dan mendorong penerapan digitalisasi pemasaran secara lebih luas.

Abstract

In the implementation of management in an education, it is needed to achieve the educational goals, this research uses a descriptive qualitative research method. Qualitative research, namely, research that does not use calculations, data collection techniques are carried out in a triangulation manner, the data obtained tends to be qualitative data, the results of qualitative research are to understand meaning, understand uniqueness, construct phenomena and find hypotheses. An educational institution, or educational institution, is an organization or a group of people that for one reason or another is responsible for the education of students in accordance with the mission of the institution. The management function in the educational institution at MIS Al-Khairiyah Sunggal has all been carried out well, including the planning function where a good plan greatly affects the success of the work.

Abstract

This research aims to analyze the population of Batam City, especially application-based GoPay e-wallet users from Gen Z and Millennials (20-30 years). This research was also conducted to complement research on behavioral intentions when using the GoPay e-wallet by developing replication of previous research. This research uses perceived usefulness, perceived ease of use, perceived user satisfaction, and perceived security as independent variables and behavioral intention as the dependent variable. The population of this study consisted of residents of the city of Batam and used a purposive sampling technique so that the sample consisted of 100 respondents. The data analysis technique used is quantitative descriptive analysis. The data described was processed using SmartPLS 3.29 software. The research results show that perceived usefulness, ease of use, and user satisfaction influence behavioral intentions when using the GoPay e-wallet. However, perceived security does not influence behavioral intentions when using the GoPay e-wallet.

Abstract

Kecerdasan buatan (AI) telah menjadi pendorong utama transformasi dalam berbagai sektor, termasuk media penyiaran. Dalam jurnalisme, AI menawarkan cara baru dalam manajemen peliputan, mulai dari pelacakan isu hingga otomatisasi penulisan. Artikel ini membahas bagaimana manajemen peliputan berbasis AI memengaruhi efisiensi dan kreativitas jurnalis, serta mengidentifikasi tantangan yang muncul dari penerapannya. Studi ini menggunakan pendekatan kualitatif dengan analisis literatur dan wawancara mendalam dengan praktisi media. Temuan menunjukkan bahwa AI dapat meningkatkan efisiensi operasional, tetapi ada kekhawatiran mengenai penurunan kreativitas dan humanisme dalam karya jurnalistik.
