Abstract

Paving block sering digunakan sebagai konstruksi trotoar, berkembangnya penggunaan material dengan berbagai variasi, paving block berkembang dan dipergunakan sebagai bagian dari konstruksi seperti penggunaan terminal kontainer, jalan raya, area parkir, serta area terbuka. Kemudahan untuk dipasang serta dibongkar, perawatan yang mudah dan pertemuan dari aspek estetika menyebabkan lebih banyak digunakan. Pemanfaatan paving block bisa juga divariasikan dengan jenis konstruksi untuk permukaan tanah. Paving block memiliki keunggulan terhadap keseimbangan air tanah. Penelitian dengan variasi fly ash dan pasir Mahakam terhadap kekuatan tekan bata beton (paving block) untuk memperoleh proporsi campuran pembuatan paving block dan penambahan fly ash kisaran 10%, 15%, 20% hingga uji tekan bata beton, sesuai spesifikasi bata beton (paving block). Kualitas paving block bergantung pada bahan – bahan penyusunnya, untuk pembuatan paving block diperlukan bahan penyusun yang bebas dari bahan – bahan organik seperti halnya dalam pembuatan beton dan tentunya akan memberikan kualitas paving block sangat baik serta memiliki mutu tinggi sesuai standar yang sesaui SNI. penelitian ini diharapkan dapat memberikan masukan untuk akademisi sebagai referensi penelitian lanjutan bagi yang berkepentingan serta mengetahui komposisi campuran pembuatan paving block, baik mutu sedang maupun mutu tinggi dengan metode perbandingan berat, serta mengetahui perubahan nilai kekuatan bata beton pada variasi penambahan fly ash yang berbeda

Abstract

ABSTRACT   This study was aimed to determine the effect of the different raw materials used in the nata processing to obtain the best nata qualitybased on their sensory, physical, chemical, and microbiologyevaluation.The method used was the experimental and composed as a non-factorial Completely Randomized Design (CRD), with 3 levels of treatment, namely:the using of 100% seaweed filtrate, the using of 100% tofu liquid, and the using of 50% seaweed and 50% tofu liquid.The parameters used in this study were organoleptic test(texture, taste, color, and aroma), physical test (thickness and rendement value, and folding test), proximate composition (the content of water, protein, and crude fiber), and the total aerobic microbes (APC).The results showed that the best nata produced  was processed by using 100% seaweed filtrate, characterized by the milky white and attractive appearance, nata tasted in accordance to the raw material used, and was very chewy textured. The best nata product was fulfilled the national quality standard (SNI 01-4317-1996) on nata. It contained 49,1% water, 7,4% protein content, and 37,0% crude fiber content; and was grown by 1,6 x 10 total bacterias.Keywords: nata, seaweed, tofuliquid

Abstract

                                               AbstractThis research was aimed: 1) to determine the ratio of different blended starch sources (sago flour, brown rice and corn) to the quality of the snakehead fish analog rice produced; 2) to determine the characteristics of snakeheadfish analog rice produced based on organoleptic value, nutritional value and total aerobic bacteria (TPC). This research was conducted by an experimental method. The research design used was a completely randomized design (CRD) of one factor, namely the source of starch differs from 4 levels of formulation. The results showed that the F4 was the best treatments with sago flour (60%), brown rice flour (20%), corn flour (20%) and snakeheadfish flour (10%) with brownish colored characteristics, typical odor of rice, the hard and solid, delicious flavor with moisture content (8.19%), ash content (1.32%), fat content (0.18%), protein content (9.30%), carbohydrate content (80.95%) and crude fiber (0.14%) and total bacterial colonies 2.4 x 103colonies/g.Keywords: Analog rice, snakehead fish, starch source

Abstract

ABSTRACT                This study aims to determine the quality characteristics of smoked baby African catfish (Clarias gariepinus) with different smoking methods. This research method was carried out experimentally by making smoked baby African catfish using traditional and liquid smoking methods. The research data were analyzed using the T-test and presented in tables and figures. The results showed that smoked baby African catfish with the traditional and liquid smoking methods were significantly different from proximate and organoleptic value. Smoked baby African catfish with the traditional and liquid smoking method had an average value of ash content was 11.44% and 9.24%, moisture content was 19.64% and 22.34%, protein content was 30.38% and 32.38%, fat content was 13.93% and 16.39%, respectively. Meanwhile smoked baby catfish with the traditional and liquid smoking method had an average of appearance was 6.38 and 7.32, smell 6.86 and 7.45, taste 7.32 and 6.86, texture 6.64 and 6,78. Total plate number analysis or TPC for the 8th day of storage showed that the traditional smoking method contained 4.49x106 colony/gr while the liquid smoking method showed a value of 3.25x106 colony/gr. Keywords: African catfish, traditional smoking method, liquid smoking method

Abstract

ABSTRACT            This research has been done in BALITBANG Laboratory of white sand, and Laboratory of Fishery Products, Faculty of  Fisheries and Marine University of Riau in august 2017. This study aims to determine the effect of adding different flour to the quality of catfish macaroni. The method used in this research is experimental method that is doing macaroni processing with the addition of different flour. The design used was non-factorial Randomized (RAL) design with 4 treatment levels, ie M0: addition of 0g flour, 300g red rice flour, 100g sago flour, M1: 165g flour, 165g red rice flour, 50g sago flour, M2: addition of 180g wheat flour, 150g flour of rice flour sago 50g, M3: addition of wheat flour 300g red rice flour 0g 50g sago flour. The experiment was repeated 3 times, so the number of experimental units in the study was 12 units. Based on organoleptik showed that the most favored treatment of consumer that is M1 organoleptic value from each treatment seen from the value of rupa, taste, aroma, and texture are 7,47,5,7,7,37,83,83. From the results of research that has been done on the treatment of M1 has the color characteristics of dark brown, fish taste is felt, the specific aroma of macaroni, as well as a chewy texture. While the results of proximate analysis seen from moisture content, protein content, fat content, ash content and fiber content. Abstract

Abstrak This research was aimed to determine the effect of the use of nipa palm (Nypa fruticans) extracts on changes in sensory and microbiology quality of fresh nile tilapia fillets during cold storage (± 5 °C). This research was carried out in two stages, namely the preliminary research and primary research. Preliminary research was conducted to find out the best concentration and long immersion based on sensory test. Nipa palm extract concentration used was 5% (K5), 10% (K10) and 15% (K15) and soaking time for 30 (M30) and 60 (M60) minutes. Primary research was the advanced research to determine the durability of niletilapia fillets soaked in the best concentration and immersion time with sensory and microbiological parameters. The design used was non factorial Randomized Completely Block Designwith long cold storage for 20 days and observed for 0, 4, 8, 12, 16, 20 days. The preliminary results showed that the best treatments were K5M30 and K10M30 based on sensory test. During cold storage based on sensory quality with border line 5 that K5M30 and K10M30treatments can be accepted until the 12th days although microbiological quality on 20th days of cold storagestill accepted for TPC parameter, while the Staphylococcus aureus parameters can only be maintained until the 16th days and Salmonella sp. and E. coli was negative on the level of treatment. Keywords:Nipa palm Extract, antibacterial, fish fillet,cold storage,quality

Abstract

AbstractThis study aims to determine the content of secondary metabolites compounds in freshwater mussel from Sungai Paku waters. The research method used was experimental by extracting the secondary metabolites compounds of freshwater mussel using methanol as a solvent. The research data were analyzed descriptively. The test parameters were yield and analysis of secondary metabolites (alkaloids, steroids, flavonoids, saponins, and phenolics). From this research, it shows that the yield of freshwater mussel with methanol extractionwas 1.29% with the content of secondary metabolites compounds was alkaloid (strong), flavonoids (moderate), and steroids (weak).Keywords: freshwater mussel, secondary metabolites, methanol.

Abstract

ABSTRACT            The purpose of this research was to determine the effect of seasoning flavor rendang on the quality and consumer acceptance of small shrimp (acetes erythraeus) sago noodles instant and analyze with organoleptic, microbiology and proximate. That was provide of flavour rendang seasoning  with4 levels: R0 (0%), R1 (5%), R2 (7%), and R3 (9%). The results of the analysis showed that small shrimpsago noodles instantwith 9%/54 gram of seasoning flavor rendang (R3) was most preferable by consumerwith 53 panelists (65.94%). The organoleptic value was significant effect on the confidence level of 95%, wherein the value of appearance 3.52 (reddish brown), flavor 3.51 (flavor rendang wasnot strong and not bitter), texture value 3.48 (a little crumbly), and aroma value 3.64 (typical of aroma rendang), meanwhile theTotal Plate Number, moisture, ash, fat, protein, carbohydrate and crude fiber was 3.6 x 103 cells/g, 8.60%, 3.53%, 0.15%, 8.15%,  79.59%, 0.22%, respectively.  Keywords:noodle, sago, seasoning flavor rendang, small shrimp

Abstract

 ABSTRAK Tujuan penelitian ini adalah untuk mengetahui optimasi fortifikasi tepung mikroalga Chlorella sp. terbaik yang dibutuhkan oleh bakteri Acetobacter xylinum dalam fermentasi Nata de coco. Metode penelitian yang digunakan adalah metode eksperimen dengan menggunakan rancangan acak lengkap (RAL) non factorial dengan empat taraf perlakuan yaitu C1 tanpa tepung mikroalga Chlorella sp. (urea5gr), C2 menggunakan tepung mikroalga Chlorella sp. sebanyak 2gr, C3 menggunakan tepung mikroalga Chlorella sp. sebanyak 4gr dan C4 menggunakan tepung mikroalga Chlorella sp. sebanyak 6gr, dan percobaan dilakukan tiga kali ulangan sehingga menghasilkan 12unit percobaan. Hasil penelitian menunjukkan ketebalan nata, kandungan protein dan serat kasar tertinggi terdapat pada perlakuan C4 dengan nilai 1,33 cm, 1,37% dan 1,00%. Untuk kadar air tertinggi diproduksi pada perlakuan C2 (95,92%). Nilai warna tertinggi terdapat pada perlakuan C2 (7,64) dengan warna nata putih cerah, untuk nilai tekstur, nilai rasa dan nilai aroma tertinggi terdapat pada perlakuan C4 dengan nilai (7,66), (7,10), (7,69) dengan karakteristik tekstur kenyal, rasa tawar dan tidak asam, aroma berbau tidak asam. Analisis variansi berdasarkan analisis organoleptik, fisik dan proksimat berpengaruh nyata terhadap fermentasi Nata de coco. Kata kunci:Fortifikasi, Mikroalga Chlorella sp., Sumber nitrogen, Nata de coco

Abstract

AbstractThis study aimed to determine the effect of different temperatures on the effectiveness of brown seaweed extract (Sargasum plagyophyllum) as an antibacterial agents for Staphylococcus aureus and Pseudomonas aeruginoosa. The treatment conducted was heating the extract with  varied temperatures (50, 60 and 70 ºC). The parameters assessed were the clear zone diameter on each medium for Staphylococcus aureus and Pseudomonas aeruginosa bacteria. The results showed that the extracting the brown seaweed at the temperature of 70 ºC was the most effective treatment to inhibit the growth of Staphylococcus aureus and Pseudomonas aeruginosa bacteria with an inhibition zone diameter of 4.31 mm of 8.30 mm, respectively. Keywords: Antibacterial, Pseudomonas aeruginoosa, Sargasum plagyophyllum and Staphylococcus aureus
